A fun Easter project…
Started with a few traditional Easter treats…

Moving on to assembly…

Easter eggs next. But technically, we already have green and brown eggs, so do we really need to color them?!
A tasty, healthy morning…
Started with a Kefir parfait. However, after a little accident, turned into to Kefir ice cream with blueberries and a sprinkle of Kashi cinnamon harvest…

Moved on to Banana pancakes. Yes they were as good as they look if not better!
To this delicious puffs of yummy!
pinch of each baking soda/powder
pinch of cinnamon
Make like any other pancake. Needs no topping but there is a drizzle of fresh local raw honey on them.
Taking a selfish few minutes to relax and count my blessings!!

With the yearly increases in tuition, the cost of living continually on the rise and the lack of a lottery win, I am trying to be much more frugal these days. Food is a good place to start but hard to maintain a whole, clean, organic diet on a budget…but it is possible and has become a challenge!
So I pulled out a tried and true in the world of frugal!! PASTA! Although I would not say it is the healthiest (in my opinion) it is considered “clean” and it was organic. So as long as it isn’t every night, a little indulgence is ok. And pasta really is a delicious comfort food!
A forgotten simple and delightful combo perfect for our beautiful spring weather…Pasta and peas!
Add a little EVOO and some aromatic Sicilian lemon rosemary salt (Msgr’s recipe) and you have a delightful spring dish.
Normally I would have made it with a cream sauce, but since everyone in our house, except me has given up dairy due to allergies, we kept it simple. We make a great cauliflower cream sauce, but we used up all the cauliflower for “fauxtatoes”.
So basically…$3 to feed 4 people for dinner was not too bad!!! Ok, 3 people. I gave up wheat for Lent. But again, $3 for 3 people?! Not bad!
PS Loving this weather! However, today is supposed to be in the 90’s. Not quite sure I am ready for that!
My favorite thing about having chickens!!! Delicious soft boiled eggs!! And poached! And fried! And hard boiled, etc….
Yes! Yoke was slightly over done! Problem with multi-tasking! Oh well! Was still delicious!
It was a busy week and I wasn’t home a few nights. Left hubby to dinner on his own..
This is what he came up with Wednesday…
Hotdogs with green onions and cheddar…
And Thursday..He had a little help from SweetPea…
Chips and Salsa with a healthy dose of Kraft Macaroni and Cheese… At least the chips were organic!
I think I need to make some schedule changes!

I know it is only the middle of March, but feels like summer. Took advantage and settled into my summer routine of coffee on the porch hanging with the chickens.
What a beautiful way to start our Sunday…heck any day for that matter!
Then off to OB for an Acai bowl with my SweetPea!

Only in OB. This jeep was totally wrapped in plastic…not a bit uncovered! Feel bad for the person that needs to get somewhere in a hurry today.

Happy Pi day! So I guess this particular one wont happen again for another 100 years. Well except for tonight at 9:26pm :0) March 14th, 2015 at 9:26:53 am or better known as 3.14152653…Pi. So what are we to do?! Make a pie of course!
SweetPea chose (and made) chocolate mousse with Oreo crust…and who could argue?! And really, one could stop there! Give me a fork!
Whipping the heavy cream into yummy white clouds.
Add chocolate and you have perfection!
And to make sure all palates were satisfied, we picked up a key lime pie while at the store. Hubby will have that one to himself!
Chocolate mousse wins and is delicious! We will make this again next year!
