Union chickens…

I think we have union chickens. They lay one day. Then not the next.

So far only four eggs since Sunday.

But we’ll take what we can get!!!

She strikes again…

Ok, so “she” took a day off. Still not sure which hen is delivering these awesome eggs. I am sure we will figure it out soon. Thought originally it was Sammy, but now if I had to bet, I would say Omlet.

Poached egg…

It has been a long, interesting and fun road to get to this point. We got our first egg on Sunday and our second on Monday. Well now that Tuesday has rolled around we had every expectation of a third egg…well just like the rest of our chicken journey, we did not get our third egg.

First, we get 2 roosters out of 4 supposed hens. Then we should have had eggs at about 4 or 5 months. Ours start at almost 7 months…and only 1 of the two are laying.

But with all of that said and done, it has all been worth it. We love our chickens. They have become not only providers of these little gems, they really are our pets. So even if they didn’t lay, we would keep them.

Our first egg we blew out and are saving the shell. The one on the left.

So what to do with our second and only egg (the one on the right)? Heck this may be our last egg at the rate we are going so it better be good. We have 1 to split between four of us…how do we prepare it? The vote is poached!

Before we crack it into our little magic done, look how beautiful this little blue gem is. It is a pretty powdered blue, almost like Wedgwood Jasperware. However, it may actually be green. It is up for debate.

Now we just have to wait for another. Hopefully our girls will come though for us and Wednesday we will have 2!

Pizza…

Individual Pizza…so many choices but had to narrow it down to just a few.

Burrata, spinach and basil…

FINALLY!!! WE FINALLY have eggs! Ok, 1 egg! But finally it is here!!

Ok, so we don’t quite have enough for the Farmer’s Market, but soon, we will have two a day!

Not sure who produced this little blue gem, but it is so exciting. Hope to have two tomorrow and with any luck, it will be a different color!
And to make it a little more special, it was on my mom’s Bday!!
